- Boneless chicken: 250 grams (cut into bite-sized thin strips)
- Red chili powder: 1 tsp
- Paprika powder: 1 tsp
- Cumin powder: ¼ tsp
- Garlic: 1 big clove, chopped finely
- Onion: 1 big, chopped
- Tomato: 2, chopped
- Lettuce: ½ cup
- Pickled jalapenos: ¼ cup
- Coriander leaves: 2 tbsp
- Lemon juice: 2 tsp
- Shredded mozzarella cheese: 1 ½ cups
- Mayonnaise: 2-3 tbsp
- Tortillas: 3-4
- Butter: 3 tbsp
- Oil: 3 tbsp
- Salt: to taste
Instructions
Step 1: Prepare the Chicken
- Marinate the chicken pieces with red chili powder, paprika powder, cumin powder, and salt.
- Heat oil in a pan, add the marinated chicken and fry until cooked. Add chopped garlic and sauté for a few seconds.
- Add half of the chopped onion and cook for 2-3 minutes. Remove from heat.
Step 2: Prepare the Veggie Mix
- In a deep bowl, combine the remaining onion, tomato, lettuce, pickled jalapenos, coriander leaves, lemon juice, and a little salt.
Step 3: Assemble the Quesadillas
- Take a large tortilla and spread ¼ cup of mozzarella cheese on half of it.
