Ingredients
- Whole chicken: 1
- Chili powder: 1 ½ tsp
- Pepper powder: ½ – 1 tsp
- Turmeric powder: ¼ tsp
- Garam masala powder: ¼ tsp
- Ginger garlic paste: 1 tbsp
- Green chili: 1, finely chopped
- Yoghurt (curd): ¼ cup
- Lemon juice: 2 tbsp
- Salt: to taste
- Oil: 2 tbsp + 1 tbsp
Instructions
Step 1: Prepare the Chicken
- Clean the whole chicken thoroughly and make cuts on its surface to allow the marinade to penetrate deeply.
Step 2: Marinate the Chicken
- In a bowl, combine chili powder, pepper powder, turmeric powder, garam masala powder, ginger garlic paste, finely chopped green chili, yoghurt, lemon juice, salt, and 2 tablespoons of oil to form a paste.
- Coat the chicken inside and outside with this paste, ensuring you fill the cuts with the marinade for maximum flavor.
- Cover and refrigerate the marinated chicken for about 3-4 hours, or overnight for better results.
Step 3: Steam and Roast
- Preheat the oven to 180°C (350°F).
- Place the marinated chicken in an oven-safe deep pan, cover with foil, and bake for about 1 hour and 30 minutes.
- Remove the chicken from the oven, discard the foil, and spoon the juices from the pan over the chicken.
- Sprinkle 1 tablespoon of oil on top of the chicken and bake uncovered for an additional 25-30 minutes at 200°C (390°F), or until the chicken is golden brown and the juices have evaporated. Turn the chicken and baste it with its juices 3-4 times during the last 30 minutes.
Step 4: Serve
- Remove the chicken from the oven and let it rest for a few minutes.
- Serve hot, garnished with fresh herbs or a side of your choice.
