Ingredients

For the Chicken Marinade:

  • Boneless chicken: 500 grams, cut into bite-sized strips
  • Crushed ginger garlic: 1 tbsp
  • Paprika powder: 1 ½ tsp
  • Black pepper powder: ½ tsp
  • Cumin powder: ½ tsp
  • Yogurt: ½ cup
  • Lemon juice: 1 tbsp
  • Salt: to taste

For Cooking the Chicken:

  • Oil: 3-4 tbsp

For the Sandwich:

  • Shawarma sauce: ¾ cup (recipe below)
  • Pickled vegetables: ½ cup, store-bought
  • French fries: for filling
  • Tortillas: 4 (large)
  • Mozzarella cheese: ¾ – 1 cup
  • Coriander leaves: 1 tbsp

For the Shawarma Sauce:

  • Yogurt: 1/3 cup
  • Mayonnaise: ¼ cup
  • Garlic: 2 big cloves, crushed well
  • Lemon juice: 1 tsp
  • Black pepper powder: ¾ tsp
  • Salt: to taste

Instructions

Step 1: Marinate the Chicken

  1. In a bowl, combine the chicken pieces with crushed ginger garlic, paprika powder, black pepper powder, cumin powder, yogurt, lemon juice, and salt. Mix well and let it marinate for about 30 minutes.

Step 2: Cook the Chicken

  1. Heat oil in a pan over high flame and cook the marinated chicken until it is done and the liquid content dries out. Remove from flame and set aside.

Step 3: Prepare the Shawarma Sauce

  1. In a deep bowl, combine yogurt, mayonnaise, crushed garlic, lemon juice, black pepper powder, and salt. Mix well until the sauce is smooth and ready to use.

Step 4: Assemble the Sandwiches

  1. Preheat the oven to 180°C (350°F). Grease a cake tin and keep it ready.
  2. Take one tortilla and spread a little shawarma sauce all over it. Add some cooked chicken, pickled vegetables, and French fries in the center lengthwise (as you would for a shawarma).
  3. Wrap the tortilla tightly and cut it into 3-4 pieces, depending on the size of the tortilla. Repeat the process with the remaining tortillas (reserve the remaining shawarma sauce to serve with the sandwich).
  4. Place a small oven-safe bowl in the center of the greased cake tin and arrange the prepared sandwich pieces around it.
  5. Top with mozzarella cheese and coriander leaves. Bake in the preheated oven for about 20 minutes or until the cheese is completely melted and starts changing color.

Step 5: Serve

  1. Remove from the oven and serve hot with the remaining shawarma sauce.
