Instructions
Step 1: Marinate the Chicken
- In a large bowl, combine the chicken with pepper, turmeric powder, ginger paste, garlic paste, lemon juice, and salt. Mix well to coat the chicken evenly.
- Let the marinated chicken rest for at least 1 hour to absorb all the flavors.
- After marination, heat oil in a pan and fry the chicken until it’s golden brown. Set aside.
Step 2: Prepare the Sauté
- In the same oil used for frying the chicken, add ginger, finely chopped onions, and green chili. Sauté until the onions turn golden brown.
- Add chili powder, turmeric powder, pepper powder, garam masala powder, and a pinch of Kasoori Methi. Continue to sauté until the raw smell disappears.
Step 3: Make the Ground Paste
- In a separate pot, add chopped tomatoes, green chilies, chili powder, ginger, garlic, cardamom, cloves, and 1 cup of water.
- Bring to a boil, then reduce the heat and let it simmer until the tomatoes are soft.
- Allow the mixture to cool, then grind it into a smooth paste.
Step 4: Combine Everything
- Add the ground paste to the sautéed mixture in the pan. Mix well and cook for a few minutes.
- Add the fried chicken pieces and stir to coat them with the sauce.
- Pour in 1 cup of water and salt to taste. Bring the mixture to a boil, then reduce the heat and let it simmer until the gravy thickens.
